Vegan Cupcakes at The Cupcake Station!

I have no idea why it has taken me so long to try The Cupcake Station! Now that I have, I can't stop thinking about their rich, moist, and delicious vegan cupcakes. At The Cupcake Station, cupcakes are their business. They know what they're doing and it shows. This is not one of those cases where you're just grateful to find a vegan cupcake; you're getting a delicious vegan cupcake. They are definitely among the best vegan cupcakes you can get in Metro Detroit.

Be aware, however, that most of their cupcakes are not vegan. On my visits, they've had a vabulous vegan chocolate and vabulous vegan vanilla cupcake. Both were fabulous, but the vanilla was my favorite. They will do special orders of cupcakes or cakes for parties and the like. For these special orders, you have additional flavor choices as they can do vegan versions of most of their flavors. With 5 locations throughout Metro Detroit, The Cupcake Station makes it much easier to supply vegan cupcakes for your next party, get-together, or cupcake binge.

I've tried both the Rochester and Birmingham locations so far and found the cupcakes to be fabulous at both. They also have locations in Ferndale, Plymouth, and Ann Arbor. Next time you want a sweet treat, head over to The Cupcake Station!

Beautiful Fall Sights, Sounds, and Delicious Food

The second anniversary of my dad's death just passed. Last year at this time, I was pretty much immobilized. Though I have struggled with grieving the loss of several loved ones in the past couple of years and I have had my share of setbacks when I thought I was doing just fine, a lot has changed inside me this past year. I decided that on the anniversary day, I should take my mom to do something interesting to keep our minds from being stuck on the memory of what happened a couple short years ago. I thought it was worth a try to attempt to enjoy life as I know my dad would want us to. 

I took my mom on a day trip to Bay City and Frankenmuth. Fall is such a wonderful time to drive through Michigan and especially to head north in Michigan. The fiery reds, rich ambers, and brilliant oranges contrasting with the crisp brown and still lush green leaves of the late bloomers and evergreens paint a picture that seems far too beautiful for the side of an expressway, and more like a beloved painting that you almost don't believe could be based on real life. Yet, these scenes come to life in Michigan everywhere from country roads to city streets to, yes, the side of the expressway. This truly is one of my favorite times to travel through Michigan and it was one of my dad's too. He was at home when we headed away from the city and traveled "up north" in Michigan, and he really loved to see the fall colors up there. With this little trip, we could honor him. We just didn't know what surprises he held in store for us that day.

Already on sensory overload from the beautiful colors all around us, we stopped in to Heather's Restaurant, hoping for something tasty to warm us up a little on this chilly day. Yet again, we were blown away by the delicious, seasonal food specials at Heather's (see previous post). The Vegan Irish Stew, Seitan Stroganoff, and house-made garlic bread were instant favorites that we hope to see on the menu again. If you want something hot, hearty, healthy, and perfect for a cool fall day, this is it. This is the time of the year when I start craving hearty (and often not-so-healthy) food. My readers who have lived in a four season climate with a serious winter will know what I mean. 

The evening was made more enjoyable by the sound live music wafting through the restaurant. We hadn't planned on arriving so late, but were sure glad that we did since we arrived just in time to catch the band playing classic hits - some of our favorite tunes. We found ourselves actually enjoying the moment - a much different scene than a year before.

After dinner, we headed to Frankenmuth and the world's largest Christmas Store - Bronner's. As luck would have it, just as we headed back toward one of the entrances, a flood of Santa's helpers came rushing into the store to spread holiday cheer. Yes, three bus loads filled with more than 130 of Santa's helpers straight from Santa's School - some hailing from as far away as Norway. All were dressed reminiscent of Santa or Mrs. Claus, but each with his or her own unique flair - from Hawaiian shirts to bright red lumberjack-style overalls. Some were big; some were small. Some had backward baseball hats; some had hats they clearly got from the North Pole. All of them were gearing up to help Santa Claus spread love, joy, and gifts this holiday season. As one after another streamed in, my mom and I looked at each other and could not hold back our laughter. It felt kind of like we were in a movie. We weren't the only ones affected. You could laughter and excitement echoing throughout the 320,000 square feet that is Bronner's.

We came across many pleasant surprises on this day trip and felt that we were being guided to be in the right place at the right time. We were somehow able to enjoy a day which we had dreaded and enjoy the beauty all around us. It was a day of sensory overload with breathtaking sights, delicious food, great music, and the kind of happiness that can only be delivered by 130 or so of Santa's newly trained helpers.

I was very excited when I found out that Cafe Muse had vegan options since it is supposed to be one of the best places to have breakfast / brunch in Metro Detroit. I went with some non-vegan family since this is a restaurant that caters to herbivores and omnivores alike.

They have a large menu of beverages which pair well with brunch, including a large tea selection to keep the tea drinkers happy. There is always at least one vegan burger, scramble, and several vegan muffins. Any scramble can be made with tofu for a small extra charge.

All of the muffins at Cafe Muse are vegan. The Blueberry Muffin came out warm and had a fantastic aroma. It was fresh and absolutely delicious. I would go back just for the muffin.

There is always a vegan scramble option on special and it seems to be creative and seasonal. I got the vegan scramble that was on special at the time. I don't remember the name of it, but it had tri-color bell peppers, jalapenos, and salsa. The tofu did not appear to be marinated and I thought that it was a bit bland by itself. I had to make sure that I had a bite of salsa in every bite I took in order to give it some flavor. This was slightly tricky because they did not give much salsa so I had to ration it out to make it last through every bite. On the plus side, the texture of the tofu was good. I found myself hoping that this wasn't another customer's first introduction to tofu scramble since it was obviously not my favorite. The components were very good and the texture was good. This could have been an excellent scramble if the tofu had had more flavor.

The Mashed Sweet Potatoes with Brown Sugar, Cinnamon & Vanilla were good. I really appreciate the fact that there are vegan options at this restaurant. The muffins alone are worth heading to Cafe Muse to try. Yes, they're that good.

Frankenmuth, known as Michigan's Little Bavaria, is one of the major tourist destinations in Michigan. If you are from Michigan, chances are you've been there more than once. It is a very cute little town with many things to do. This is one of my favorite places in Michigan. My favorite thing to do is shop at Bronner's Christmas Wonderland, the world's largest Christmas store, open year round. I could seriously spend all day there. We love spending time in the picturesque downtown, which often has small festivals or events going on. Although it is a great place to visit in summer, we enjoy taking small vacations there in the winter as well. Not only is it beautiful when it's covered in snow, but there are also many things right in the comfort of your hotel if you stay at either Zehnder's Splash Village or the Bavarian Inn Lodge. We usually stay in the Bavarian Inn Lodge, with it's shops, restaurants, bars, 4 indoor pools, indoor miniature golf course, table tennis, and pool tables. 

Some people come to Frankenmuth for the ambience, family activities, nearby outlet shopping, or the cool hotels, while others come for the fudge or the famous Chicken Dinners. In a town with a heavy emphasis on meat and dairy foods, I was worried that I wouldn't be able to fully enjoy Frankenmuth when I went veg. I always had to pack enough PB&J sandwiches to last the whole trip, but the times they are a-changin' my friend. It is now possible to get more than just a side salad in Frankenmuth! Two of the main restaurants, The Bavarian Inn and Zehnder's now both have (small) vegetarian menus and there are vegan options at each. Make sure that you ask for the vegetarian menu.

I'm really glad that Frankenmuth is expanding it's vegetarian and vegan food options. However, given the choice, I would still drive the half hour to Heather's Restaurant in Bay City for many more great vegetarian and vegan options. Update: Heather's Restaurant in Bay City is now closed. For another great breakfast or brunch option, check out La Crepe du Jour (more info below). If you want to have the Frankenmuth Dining experience, I would first recommend the Bavarian Inn Restaurant.

The Bavarian Inn Restaurant has two vegan meal options: Quinoa Vegetable Stir Fry and Vegan Chili. Both options were good, but we very much favored the chili. The Stir Fry is a curry lime quinoa pilaf with a blend of fresh steamed vegetables. It is accompanied by a side salad with vinegar and oil. This was a light, healthy meal with very mild seasoning. Do not let the word curry fool you if you are not into spicy food. This dish is not spicy and does not resemble an Asian curry. The Chili is a hearty blend of sweet potatoes, quinoa, beans, and vegetables in a seasoned roasted vegetable and tomato stock topped with sliced avocado. The Chili was definitely heartier, more filling, and more flavorful than the Stir Fry. Both are good options. In my opinion, they are probably the best options in Frankenmuth. 

These two vegan items are listed on both the lunch and dinner menus. The difference between the lunch and dinner options is a whole bunch of endless side items which are not vegan and the server may not be aware that you don't want things like buttered noodles, cole slaw, etc. I recommend ordering the lunch portion which does not come with all of these items that you can't eat but pay extra for, unless you are able to work out some substitute sides with the server and chef.

Located directly across the street from The Bavarian Inn Restaurant is Zehnder's, another one of the famous Frankenmuth Restaurants. Zehnder's can also make vegan food, but we found the whole experience to be confusing and almost slightly suspect. Here is our experience from the last time we visited Zehnder's - we called ahead and were told that there were many vegan options, but when we arrived and checked out the vegetarian menu, none of the items were vegan. Our server was very confused and thought that there was nothing we could eat there. We gave him some questions for the chef - to see if maybe something could be modified to fit our diet. He also found a vegan server who offered us her help, but the options seemed quite limited - salad, plain baked potato, maybe cranberry sauce? In the end, the chef was able to modify something and we essentially got some bread with sauteed vegetables on top of it. I wasn't all that happy about this since I thought that they had actual vegan options on the menu, but it was actually very tasty and I would eat it again in a pinch. 

Update: Probably our new favorite place to eat in Frankenmuth is La Crepe du Jour. They offer gluten-free, vegan crepes. While they may not have a ton of vegan options listed on the menu, the staff is happy to help you create your own or customize one of the existing options to make it vegan. There are plenty of sweet offerings. We also really enjoyed combining different veggies with salsa. La Crepe du Jour is located in the River Place Shops outdoor mall, right in the heart of downtown near both the Bavarian Inn and Zehnder's.

If you are planning a trip to Frankenmuth, there are a few other food options to consider. There are two Chinese Restaurants in Frankenmuth - Szechuan House and Panda King Buffet. They are not in the most premium location like the Bavarian Inn and Zehnder's, but they are still within walking distance if you do not have mobility issues or crazy winter weather to deal with. We have eaten at the Szechuan House before. I don't remember what we got, but we talked to the person working and they were able to make us something vegan. Poblano's Mexican Grill & Cantina does not list any vegetarian items on their menu, but said that they can make something vegetarian and that their rice and beans are vegetarian. There is also a Kroger Grocery Store a little further down on Main Street and a 24-Hour Meijer Store near the I-75 Frankenmuth exit. Both have vegan options.

Nearby Birch Run, home to outlet shopping, offers Starbucks and Taco Bell. They are only about a 15 minute drive from Frankenmuth.

Road Trip Survival Series: Taco Bell

If you are taking a road trip in the United States (or parts of Canada), you definitely want to add Taco Bell to your list of vegan-friendly places. Of all the vegan-friendly places in the United States, Taco Bell might have the most locations. It also happens to have a ton of vegan options.

Here are a some of the vegan options at Taco Bell and how to order them:

Bean Burrito Fresco Style (Fresco Style means they remove cheese and sour cream and replace with pico de gallo).

Bean Burrito - Remove Cheese and Sour Cream, Add potatoes, rice, and/or guacamole.

Black Bean Burrito - No cheese. Guacamole, potatoes or pico de gallo could be added.

As a general rule, the beans, rice, salsas, guacamole, pico de gallo, potatoes, tortillas, and tacos are vegan. You can also make sure with the person taking your order that there is no meat, cheese, or sour cream on the item you are ordering. Some of the sauces and dressings (not salsas or the little sauce packets) contain eggs or milk products. Also, the Doritos Locos Taco shell contains enzymes from cows so you'll want to avoid them. If you are a vegetarian and not vegan, you will still want to stay away from the sour cream as it contains gelatin, which is not vegetarian. If you are ever unsure about a menu item or want to make sure the ingredients haven't changed, you can check the ingredients here.

Road Trip Survival Series: Starbucks

Even if you are too ragged from traveling for anyone to see (smell?) you, you can always use the Drive Thru
As the largest coffeehouse chain in the world, Starbucks makes a huge impact by offering vegan options. A Starbucks drink is the perfect companion to any road trip. It will give you the energy and motivation to keep on driving. Plus, you know you have to use the bathroom anyway.

Starbucks offers a wide variety of hot and iced teas which are vegan (all are vegan at the time of writing). Starbucks also can make most coffee drinks vegan with a few modifications: 1. ask for soy milk instead of dairy 2. ditch any whipped cream, java chips, protein powder, or caramel drizzle. 

Anything with the following can not be made vegan: pumpkin spice, white mocha, creme brulee, light frappuccinos (regular frappuccinos are okay if they don't have any of the other non-vegan stuff and you sub soy milk). Generally the syrups are vegan, but sauces are not (except mocha). This means that you can get a Vegan Hot Chocolate! Hurray! If you are unsure about any particular beverage, you can always ask your barista if it can be made dairy free or not.

Cool and refreshing, this is one of my favorite summer drinks. As an herbal tea, I can drink as many of these as I want, anytime of the day, without having to worry about caffeine.

This Hot Chocolate is SO good. With perfectly frothed soy milk, this Hot Chocolate is better than the ones I remember from my childhood. Just don't tell my mom. ;-) Sometimes when I am away from home and forced to eat in restaurants that don't have the best vegan options, I will add in a Starbucks drink with soy milk just to pump up my protein intake. Seriously, sometimes I can only handle so many protein bars or shakes without getting sick of them.

If juices are more your style, Starbucks offers an array of grab-and-go juices as well. Perhaps you'd like a snack to go with your beverage? Don't worry, Starbucks always seems to have vegan-friendly snacks. Through the years I have seen some of the snacks come and go, but I can always seem to find a vegan option like these Fruit Snacks and That's It Fruit Bars. Check out the snack selection inside to see what's available. Yep, you'll probably have to go inside if you want to check out all of your snack options so I hope you were able to find a shower somewhere along your road trip. ;-)

Road Trip Survival Series: TCBY

As one of the largest U.S. retailers of soft-serve frozen yogurt, TCBY makes it easy to get vegan soft-serve frozen yogurt for the mainstream. They now have three vegan flavors - Silk Chocolate Almond, Silk Vanilla Almond, and Silk Coconut. All three are vegan, dairy free, and gluten free. I thought it was really cool that TCBY actually uses probiotics in making this non-dairy frozen yogurt. The flavors of the day vary so you probably won't find all three vegan options available on any given day, but this just gives you a reason to keep going back.

In researching this post, I decided to take one for the team and try it out myself. I have tried and enjoyed both the chocolate almond and vanilla almond flavors. I can appreciate the fact that TCBY has so many locations and makes it possible to go out with family and friends and have ice cream or fro yo like I used to. Maybe once I spread the word, they'll start inviting me out for fro yo again. Or maybe there is some other reason they stopped inviting me. ;)

If you go to TCBY on a Wednesday, they have Waffle Cone Wednesday (do they do this everywhere?) and the price of a waffle cone is less than half the regular price of the fro yo. To my surprise, the girl at the store told me that the waffle cone is vegan! Check with your local store though because apparently the store-made waffle cones contain egg. TCBY also has vegan toppings you can put on your fro yo, like fresh fruit, nuts, oreos, and peanut butter sauce.

Road Trip Survival Series: Dunkin Donuts

As we gear up for a mini road trip this weekend, I thought it would be a good idea to share some road trip survival ideas. Let's face it, if you are a vegan who has caught the travel bug, you are bound to run into some challenging situations from time to time.

The good news is that it's getting easier and easier to find good vegan options throughout the world. As much as I love a good mom-and-pop shop, big chains that offer vegan options have been a lifesaver to me in many situations. You don't just have to be on the road to appreciate these chains. Some of you may live in areas where the only places that offer vegan options are the big chains.

Dunkin Donuts has now added Almond Breeze Almond Milk to their stores. As one of the largest coffeehouse chains, this is a major win for vegans. Almond Milk is available at most Dunkin Donuts locations. To check if a certain location has it, use the store locator and look for the AM icon. Dunkin Donuts also offers other vegan menu options, such as tea, hash browns, and bagels.

To write this post, I thought I would give the coffee a try. I got a regular coffee with Almond Milk and thought it was good for a coffee. I'm not really a coffee drinker (more for the rest of you coffee addicts) so saying it was good is the highest compliment I can give a coffee. I have heard from others that this coffee is very good. Dunkin Donuts also offers iced coffee and lattes with Almond Milk.

What a luxury it is to have a place where you can get your morning coffee and maybe even a quick breakfast or snack without having to bring your own plantmilk. Plus, Dunkin Donuts seems reasonably priced. I picked up this coffee for about $1.50 and I noticed that lattes were somewhere around $2.50. Add Dunkin Donuts to your list of vegan-friendly places.

I first heard about Heather's Restaurant from Dan from The Gay Vegans when I met him at Vida Vegan Con II. Upon his advice, I hightailed it over to Heather's for what I was promised would be delicious food! Okay, actually, I tried to go to Heather's a few times on Michigan road trips, but couldn't make it because they close early most days. They are only open for dinner on Fridays and Saturdays.

Heather's is located in Bay City, a very cute, old-fashioned small town located near the base of the Saginaw Bay on Lake Huron. The downtown is less than 5 Miles from I-75, which is a major expressway many people use to go on their vacations 'up north' to mid or Northern Michigan. Bay City is only about a half hour drive from two Michigan tourist attractions - Frankenmuth, Michigan's Little Bavaria, and Birch Run, home to a large outlet mall. It also seems to be a vacation spot itself due to it's charm and the beautiful water. Finding Heather's was really a revelation for me because it's not easy to find vegetarian, and especially vegan food in Michigan, outside of the Southeast Michigan and I find myself traveling outside of the area somewhat frequently.

Heather's always has great specials. Vegan items are noted with a V with a circle around it. Every special we've had there has always been great. With so many specials, you never get bored with the menu.

Heather's has excellent French toast and often has some kind of unique french toast on special. We once got Zucchini French Toast and it was out of this world. Another favorite from the special menu was the Tofu Bacon pictured above. It had a rich smoky flavor and meaty texture. Heather's has hash browns, but the House Potato is soooo good that we have a really hard time not getting it as our side.

The Mediterranean Veggie Sandwich is one of my absolute favorite items on the menu at Heather's. It has a delicious combination of flavors to keep your taste buds happy. It's served with a Red Pepper Almond Mayo that is truly fabulous.

Also worth a try are the 'Unchicken' Sandwich and the Homemade Black Bean Burger. The 'Unchicken' sandwich is a great sandwich for anyone transitioning to a plant-based diet or anyone who misses eating chicken sandwiches. It is a baked and marinated tofu fillet in crisp seasoned breading topped with tomatoes, fresh greens, and homemade mayo. The Homemade Black Bean Burger is quite delicious on it's own, but even better with the guacamole they serve it with.

The first time I went to Heather's, I got this Seitan Pot Pie and my mom got the Mediterranean Veggie Sandwhich. The pot pie was very yummy and the texture of the seitan was somewhat like that of the meat in a frozen pot pie. Although I enjoyed this pot pie, I preferred my mom's sandwich to my pot pie.

These Vegan Ribs were on special over the summer. They were totally delicious. The sauce was fantastic and the ribs were more flavorful and better than we had anticipated. The texture was very good - firm and chewy. The potato salad was also good - a little mild for my husband - but good.

Heather's always has beautiful, delicious-looking desserts, but we're always too stuffed to eat them. I did once buy some cookies to go, and they were just as good as I had imagined. They were moist and delicious.

Fear not if you are eating out with a die-hard meat eater. Heather's has plenty of options for both omnivores and herbivores alike. The omnivores seem just as happy with their food as the herbivores. The food at Heather's is certainly more creative, fresh, and unique than anywhere else I have been outside of a big city. Aside from the decor, which is more like a cozy country restaurant, this place would fit in in a place like Ann Arbor, Royal Oak, or a big city.

Finding Heather's has seriously improved my travels around Michigan and I make it a point to stop there whenever I can. Truthfully, we sometimes make the hour and a half drive from our house just to go to Heather's. Then we plan other things around it - like stopping in Frankenmuth or Birch Run. 

My Indian Dining Experience at Shiv Sagar Mumbai & Tips for Eating Out in India

We went to Mumbai to pick up my friend who had arrived the previous night from her 22-hour trek from Detroit. My husband had an appointment around lunch time so he found us a nearby vegetarian restaurant called Shiv Sagar. Although the restaurant was within walking distance, we had to cross a street to get there and crossing the street in Mumbai is one of the scariest things I have ever had to do. We waited through so many lights while hordes of Indians crossed the street, dodging stray dogs, cars, rickshaws, scooters, and motorcycles. As more and more Indians laughed at us and crossed the street, we decided it was time to just pray and take our chances.

It was a nice day so we sat in the covered outdoor seating area instead of inside in the air conditioned dining room. By sitting in this section we saved a few Rupees off our bill. However, when we left our waiter a tip, we used up all of that savings and then some by giving our waiter a ridiculously large tip. We were dining out without our Indian companions for the first time and had never tipped before. Not wanting to give Americans a bad name or make Americans look cheap, we gave what would have been a generous tip in America - probably a few hundred Rupees more than standard Indian tip. I started to think something was up when our waiter called all the other waiters over to look at our bill after we paid it. Only after talking to my husband later did we find out why the waitstaff was all so shocked.

If you've eaten at an Indian restaurant in a Western country like the United States, you may be familiar with the crispy papad or papadum bread they sometimes serve as an appetizer. This is that same bread, which is typically made from lentil flour, but with fresh tomatoes, onions, cilantro and masala (spice mix) added on top. I fell in love with this dish in India. It was delicious. However, I do not recommend eating any uncooked food in India if you are a Westerner. You will get sick. At the time, we did not realize that we were ordering uncooked food (tomatoes, onions).

You can see how big this is compared to my body in the background. Dosa is a fermented crepe-like specialty from Southern India usually made from rice and lentils. The masala part is hidden on the inside. In this case, masala means spiced potatoes that you eat by wrapping little pieces of the dosa around them. This was my friend's first masala dosa and she thoroughly enjoyed it, as did I. 

Note that this dish is sometimes made with dairy (possibly ghee or yogurt) so you have to check with the waitstaff when dining out. Usually if it is made with ghee, it is no problem at all to omit it at your request.

Do you notice the Marathi Dictionary & Phrasebook in my hand? Marathi is the language of the state of Maharashtra, of which Mumbai is the capital. If you are traveling around India, be aware that not everyone speaks English or even Hindi. You may sometimes be in a position in which you need to know some of the local language and there are many regional languages in India. Before you plan a trip, do some research into where you are going. Throughout my travels in India, I have wanted to communicate with people who spoke only one language, and it wasn't mine. I remember trying to talk to my husband's aunt's servants. One spoke only Hindi and one spoke only Marathi. They could barely even communicate with each other and I, not knowing this, was apparently trying Hindi with the Marathi speaker and Marathi with the Hindi speaker. My husband's family's maid spoke yet another language altogether, but knew some Hindi and Marathi and became really good at understanding my combination of sign language, Hindi, Marathi and English.

In this picture you can see the masala inside the dosa. You can also see the tomato and coconut chutneys they give you with the Masala Dosa. The tomato chutney is like a spicy slightly sour (like tomato) tomato sauce. I am crazy about tomato chutney. It was very good here. The coconut chutney is usually less spicy and is like a lightly spiced creamy coconut sauce. Coconut chutney sometimes contains dairy so ask when you are eating out. Eating vegetarian is very easy in India, but eating vegan is not always easy. Dairy is used in many, many dishes in India. Usually South Indian food and Indian Chinese are more likely to be vegan.

After having been in India for a while already, my mom was sick of spicy food and jumped at the chance to order pasta from the menu. Imagine her surprise when the pasta was super spicy and our Masala Dosas were not. She will forever remember (and possibly regret) ordering that pasta.

Since most people in India eat with their hands, it is customary for restaurants to offer a finger bowl for patrons to use to clean their hands after a meal. You may even be offered a finger bowl after a meal when you are a guest in someone's home.

The finger bowl typically consists of a piece of lemon or lime (the two are used interchangeably in India) in warm water.

It is very common to have a mouth freshener after a meal in India, typically made from fennel seeds, sugar, and sometimes other additions. This mix serves two purposes; it freshens your mouth while also aiding digestion.

Dining at Shiv Sagar was one of those experiences that I will never forget. The food was delicious. We learned some new things and we definitely had some laughs. I would love to come back here some day.

Discovering Chipotle While on the Road in Kentucky

A few years ago, my husband and I were making our way back up to Michigan after doing a road trip through select cities in the Southeastern United States. It was not always easy finding vegan food on our road trip, but we were able to do it most of the time. As our snacks started dwindling and my stomach started growling, I started to get concerned. We did not have enough time to travel out of our way because this was the last leg of our journey and we had to get home and get back to work. We crossed into Kentucky and I got a little worried because it wasn't a vegan hot spot as far as I knew. In fact, after crossing into Kentucky, the next billboard I noticed said 'Hell is Real' and I was beginning to wonder if hell was going to be real to me in the way of being super hungry and having no food to eat.

Just as I was beginning to give up on the idea of eating out and decided to instead look for a grocery store, we found a vegan-friendly place we had never heard of - Chiphttp://www.chipotle.comotle! To say it was a welcome find would be an understatement. It was a sight for sore, hungry vegan eyes. I fell in love instantly. First of all, finding random vegan food just off the expressway in the middle of Kentucky was a-ma-zing. And, on top of that, for it to actually be good - and healthy!

After we found out that this was a chain and we had some in Michigan too, we started to go a bit overboard. We didn't live that close to a Chipotle at the time, but we found excuses to be in the neighborhood of one whenever possible. I found myself dreaming of cilantro lime rice, beans, guacamole . . . And this was before they even offered brown rice as an option. Speaking of guacamole, during those early days we thought the cashier screwed up when we ordered guac and forgot to charge us. When we realized and asked a cashier later, they told us that guacamole is free on the vegetarian food! I love that Chipotle has evolved to become ever more friendly to my diet. Now both their black beans and their pinto beans are vegan and they are unveiling tofu sofritas throughout their stores. They haven't reached Michigan yet, but I'm hoping they will soon.

Chipotle is fast, inexpensive, and healthy. There are other chains and local restaurants popping up that are similar to Chipotle and we do appreciate this because it just means that many more places where we can find something to eat. While traveling especially, it is good to be aware of chain restaurants that offer vegan food options because sometimes they are your only option. We prefer Chipotle over their competition though because they seem to be one of the more responsible companies. They have a lot of information about this on their website. Some of the ingredients they use, like their beans and cilantro, are organic when possible and they have been working on removing GMOs from their food.
